The Procurve switch 2510G-24 allows to do port mirroring on all the ports (from port 1 to 23) in a single port (port 24)?

The manual pages do not seem to specify a limit so I assume the answer is yes, check the documentation here (page B-26):

The problem is that the "no-limit port mirroring" is a requirement by a customer that wants to change an existing (non hp) switch only to gain this feature.

Before buying this switch I need a statement, either in a HP document or by someone from HP, that this requirement is met.

Well we don't run any 2510's so I can't check that for you. I've just tested on a 2610-48 and I can mirror all the ports to a single port fine.
The 3500/5400 series also allow you mirror an entire VLAN on a switch to a port and support remote monitoring destinations.
