(multiple) voip questions

i'm reviewing my network regarding a voip implementation(and collecting as much info as possible). I have several questions:
* What is the new location of the cookbook?

* i want to connect the pc's through the ip phone, but with vlan assigned through 802.1x.
i think the 3500/5400 support multiple authenticated clients with different vlan on one port, but does the 2600pwr series does?
*currently i have 2800 edge switches, should i swap them for 2600/3500's or are there other price effective solutions to provide POE to the phones.
*other things i should configure and recommended settings(qos, voice vlan,...)?
