Checking relay mail server

Thats what to know if the mail server really delivers the mail, is there a log on the server that can verify if the mail was really sent?

So far you told us that your-server sends email successfully to the mail-relay server. What kind of server/OS is the mail-relay server and do you have access to it? There could be further mail relay and delivery after the first mail-relay server. Who is the final receipient and at what server?

Are we talking about the mail server, where the mail ends up? Or a relay server, where it is forwarded?
There should be a log on both. But it may be forwarded multiple times.
So you need to test it once and then assume it works.
