you can use tools that create images of the HDD like Norton Gost or Acronis True Image. Of course you can also use the dd command.

You could also see mondorescue for disaster recovery cd, so bootable cd.

You have already received good instructions.
Building a boot DVD is a good plan. Backing up user data this way is not. Obtain and implement a tape based backup systems for this part of your backup.
The EVA, when properly licensed has ways of splitting storage share points to let you get good backups easily. It can all be automated and merely requires someone to monitor the job logs.
