Note that HP's VM implementation has a specially focused purpose, mainly for high end, resource demanding applications, which generally means using HPUX. If you are planning a data center to host, let's say websites or general purpose applications that you don't know anything about but just want to build an infrastructure, it is best for you to go with VMWare or one of its competitors.

Integrity Virtual Machines is for... Integrity Machines and should be considered only if you want to virtualize HP-UX or OpenVMS, or if you have a need to use Linux or Windows on the itanium architecture which is mostly suitable for scalable or high performance stuff.
Besides that, any other use should go on the x86 platform which is generic, cost-effective, and on which VMware (and others) are able to cater to a wide audience.

HP VM only runs on hosts running HP-UX.
vmware will run on any wintel hardware, linux or windows.
vmware specifically xen and linux derivatives will not run on Itanium IPF IA64 hardware. HP VM will.
