Configure VC ethernet interconnects on existing enclosure
Is there any way to pre-configure two new VC ethernet modules that will be replacing two existing Cisco 3020 switches? I want to minimize downtime if at all possible.

Not really, unless you have a spare chassis hanging around.
But if you understand VC fairly well, you could use the Command Line Interface (as of FW version 1.20 and up) to create a scripted config.

potentially you could have a sort of script written out prior to installing the modules. This may help to minimize downtime.
Remember, to assign server profiles to servers, the servers must be powered off. So regardless, there will be some downtime when migrating from Cisco to VC.
