Isn't it obvious?  When I went to edit one of mine to "correct" it, I briefly saw a flash of the correct .txt form

And when I replaced it and re-edited, it converted the "<" to "&lt;" and ">" to "&gt;".

 

I.e. It is treating the original .txt format as .html and that treats <xxx> as HTML tags and if unrecognized, they get stripped.

Though it does seem to do some <> correctly.
