Most modern boxes build after the D and K and R class will boot off the san.
Its really a bad idea in my opinion, because if your system loses the SAN its useless. It is useful to be able to boot off local disk to help diagnose san problems in case of failure.

Boot from SANs is fully supported as depicted in the document a previous poster provided.
And contrary to popular belief - it IS now considered a Best Practice.
If you have a Bad SAN and you're set up to boot off the SAN - what good/purpose will it serve for you to boot your servers? Unless you have dual SANs like we do - we set up SAN boots so we have redundant SAN boot LUNs - one from SAN A and another from SAN B - since our environmenrts are highly redundant.
If you only have one SAN - your SAN outage will mean you will not be able to boot your servers. But again, what good will it do you to boot your Servers if it does not have its data on the SAN?
SAN boot -- go for it! Specially if youi've HP EVA or XP storage.
