In order to detect new HW (network, video,....), you need run RH "kudzu" on first boot.
Is we speak about SCSI disks, and SCSI controllers are different, you need to add SCSI module to your initrd image.

You will probably had no problems,
just put the disk in the same connect point
(Primary master / scsi 8 etc.)
You may have problem with some hardware
that installed with special installation
and not installed with the installation
of your OS, so you need to check this point
and maybe you will be need to install that
drivers after you will replace the disk.

server will run ok.
2)kudzu runs automatically on bootups in RH,
can check with 'chkconfig --list kudzu'
3)most probably would not need recompile kernel
or change IDE controller settings since IDE driver already in the kernel and controller already works with Linux.
4)put attention to /etc/fstab,check also whether you've exported previous disk with NFS.
So far - as Microsoft call it - PnP (Plug'n'Play) :)
