I had to do this once. You will have to google for the complete steps, but here is a summary.
1. install thunderbird. on windows and linux.
2. import your evolution mail into thunderbird.
3. export the mail from thunderbird - linux box.
4. import the mail to thunderbird - windows box.
5. import the mail into outlook - windows.
I believe you can also use eudora lite. Anyway, google it and you will find the complete solution.
