Change ISCSI Target IP

I inherited an All in One 600 with a few SQL Databases hosted via ISCSI. The User and ISCSI traffic were going through one nic (A team actually). I created a VLAN on the switch with dedicated NICs on the AIO and on the DL360 on a different subnet to isolate the ISCSI traffic. It worked fine until it came time to switch the existing ISCSI initiators to the new target IP. I could create the new target on the initiator but I could never get it to "let go" of the existing target IP. How can I make the switch yet keep the ISCSI volumes intact on the DL360? Does anyone have the correct steps or procedure to do this scenario? Basically there's an existing ISCSI target and I want to switch to a new IP address. Kind of lost right now.
