Number of processors
How can I tell the true number of processors in a server AND what cores they have?

Depends how many you have.
The HPSIM reports are not that good when it comes down to looking at cores versus sockets etc. especially when the older hyperthreading is in the mix.
The HP Diagnostics Utility gives probably the best breakdown of the server, but it would be something you'd do individually.
