How to get Nimble Automated Snapshots Working!
So I have been tasked with automating snapshots but have had no luck with scripts online. Does anyone have any success/information on accomplishing this?

You should not need scripts. You are looking for Volume Collections. Volume Collections (a volcoll in the CLI) can be scheduled.
Log in to https://infosight.hpe.com. From the Main Menu, go to HPE Alletra 6000, Nimble Storage > Resources > Documentation. On the left, "Refine By" Administration Guide. Use either the CLI or GUI Administration Guide.
While there is a lot of good background in the Snapshots section, you want to look at Data Protection > Volume Collections > Create a Volume Collection.
A volcoll can optionally synchronize with either Microsoft VSS or VMware vCenter.
When creating a volcoll you add one or more (up to ten!) schedules. Each schedule specifies how often the schedule happens and how many to keep before automatically deleting the oldest ones.
After creating your volcoll, add the desired Nimble Storage volumes. From this point, the creation of snaps and snap collections is automatic.
Note: After creating one or more snap collections, if you rename a schedule, the retention count only applies to the snap collections with the new schedule name. See the section on Snapshots > Managed and Unmanaged Snapshots.
