Aside from being sent an alert if the Nimble gets too hot, is there a way that I can use the Nimble interface to see live time temperature readings?

Good morning Nick,
I am running NOS version 2.1.2.0 but when I click Monitor I do not have an Arrays option and I do not see the same screen shot you see.

Yikes! Sorry Chris, my bad, I meant Manage->Arrays! Will edit now...
Also it would be good for you to get up to our official GA release of Nimble OS 2.1 which is 2.1.4.0. It has significant bug fixes from 2.1.2.0...
