how can i move my exchange server on to a different server box?

Basically the best option wether it is Exchange 5.5, 2000 or 2003 is to:
*Install a new server into the same Exchange organization/site
* move all mailboxes to the new server
* move all public folders to the new server
* move all connectors/reconfigure connectors
* move all unique roles
* remove the old server
Depending on your version of Exchange and Windows there are limitations and considerations to be taken into account.
It is also possible to restore to another server from a backup - but this is more complex and also depends on the version of Exchange.
