Your local HP sales rep should be able to handle this and have HP do the hardware install as well. There is nothing to configuring these units from a software point of view other than creating a volume group and logical volume(s) and then recreating the file systems. If this is more than you can handle, purchase an hour or two of time with your local HP SE who can have this configured in no time.

Yes, I highly recommend you dump the old 2GB drives in favor of several newer, larger capacity drives. Given that your current SCSI interface can only handle 20MB/sec, striping won't help you very much as any new disk drive can transfer data at that rate on a continuous basis.
There are many sources for these drives, including HP and third parties. Be sure that whomever you pick to provide them understands that you have a "high voltage differential" SCSI bus on your system.
