Are you interested in the transfer rates?

These are the maximum per scsi standard:
WU scsi 3 - 40 MB/second
Ultra2 - 80 MB/second
Ultra3 - 160 MB/second
Ultra320 - 320 MB/second

Ultra160 is considered to be the same as Ultra3. Some manufacturers use the term Ultra3 and some use Ultra160, but the terms are interchangable.

I wasn't able to immediately find any whitepaper which lists the differences, but I know it's out there.
The truth is out there, but I forgot the URL..
