Just a thought, are the cards already configured with an IP, or do you use DHCP. I beleive, although don't quote me, that the setup for this type of configuration is usually done from the printer main panel. Once IP'ed telnet to it and see if there is any user interface, which should let you setup all the usual configs.
After that, setup the printer via sam (I know, but it usually works;-) as Printer Plotters --> LP spooler --> Printers & plotters --> add remote printer.
Configure your particulars and that should do it. (works for me anyway!)

Found this link which should be of some use, it details the setup of the network side of the printer, unix printing from there should be straight forward....

I don't think you can use jetadmin to configure the Epson printer as a network printer. Nowmally jetadmin is used to configure a HP network printer with HP-Ux. There is a work around.
