how I can I determine the last time sendmail sent an email on a system which no longer has sendmail running but is still installed in its default capacity ?

Did you checked /var/adm/syslog/mail.log ?

check /var/adm/syslog/mail.log

This should have the information

[RAC_1]

Check /var/adm/syslog/mail.log if this has not been removed.
