Note: The Cluster requirements for Oracle RAC on all platforms varies from version to version.
You also fail to mention what version of RH you plan to use, which effects the answer to the question.
There is little variation that I am aware of between configuring the 32 bit Cluster suite and the Itanium ia64 based suite.

I could be wronng but I don't thinnk GFS is supported on Itanium.

For 9i you should use Oracle Cluster manager.
For 10g you should use Oracle Cluster Ready (CRS)
For 10gR2 you should use oracle clusterware.
Oracle provides OCFS (oracle clusterd file system) if you need a CFS. recentely oracle released a new version of OCFS named OCFS2 which can install on 2.6 kernel.
Also 10g and 10gR2 provie you ASm (automatic storage management) for storing datafiles.
