I didn't find auto-reply/out-of-office option in Evolution

how can I configure the auto-reply(out-of-office) in Evolution ?

Should I also have to configure the MTA(postfix) ?

This depends, if you set the auto-reply on the MUA (evolution), the client computer must be on and the program open, to be able to receive the mails and send the reply.

If you set at postfix level, you don't need the client to be on and evolution open.

Hi,
It all depends on the implementation(Server/client)level. if you want to do it on server level up to now there is no way by default to enable this option on sendmail.
But FYI there is a program called "VACATION".
its a tool(set of scripts)that unix systems used for the purpose and its also available for linux systems as well.
With some workaround this might be helpful to you.
