May be you need to use HP drivers. Ooops! there is http://h18004.www1.hp.com/support/files/server/us/download/19967.html driver, but it's just RPM, and I couldn't see image for driver floppy.
Do you have SCSI or SATA disks?
According to HP certification matrix, Red Hat AS 3.0 & DL 360 G4 should work.

We Have 2*72GB Hot plug SCSI Drives. Any clue how to get RHEL Update 3?

1) run "up2date" on your host
or
2) download RHEL3.0 upd3 ISO images from rhn.redhat.com
Of course, in both cases you need RH support contract

We had a similar issue on RedHat AS 2.1, when called HP they asked us to use Update 2 CD(not even Update 3 which was also there)The OS recognised the disks only with Update 2 and not with Update 1 or 3, so you might want to check with HP about which Update to use, also you need the driver for the array controller (driver diskette needs to be created before starting the os install)
