The current update of 2.1 is Update 7, which is not released as ISO image but as set of RPM files.
If you are having a valid support subscription with RedHat you can download Update 6 ISO images from there and use it to update your system.

I have just a question :
I have Linux Redhat ES 2.1 update 4 and i wonder if the update 5,6 and 7 it's a package with the Linux CD installation, or it's a package that i must install after Linux Installation ?

Update CD contains the full set of RPM's including those which are updated and non updated.
RedHat releases them in this fashion so that the user who wants to install 2.1 first time, all he has to do his take up the latest update CD and boot with it and start the installation process.
wheras incase of SUSE, the user has to first install the base OS (the initial release) and then install the Service Pack 1 and then Service Pack 2 and likewise...
If you are running with RH 2.1 U4, to move to U6 you can do upgrade installation (by booting the system with U6 CD1). But unfortunately RedHat does not support upgrade installations. Check up RH website to how to overcome this problem.
The easy way would be to use up2date and update all the packages on the system
