Outlook default font in e-mail replies

Hi,
I use Outlook 2003 and I've set Word 2003 to edit/compose my mails. When I try to compose or reply to a mail, in the word processing window I receive Times New Roman message font with 12 points and I receive standard English (U.S.) as language settings. I want to set it to 10 points Arial and Hungarian.
Could anyone help how I can set the default font and spelling language in e-mail replies?
