STOP: 0x0000007F (0x00000008
We can get upto about 40 users connected via Citrix ICA and about 3GB RAM is used as shown by Task Manager then all of a sudden the server reboots with the STOP error shown in the subject line.
Happens on 3 x new servers that are identical in specification and OS. I have updated to the latest ROM and HP Proliant Support Pack for W2K3 V7.20A
Any suggestions as to where to go next or anybody else had similar problems.

Have you run a Memory test?
These MSKB states that most likely your problem is HW:

then software is often the cause of 0x7F
Here is one possible other issue:

Kernel drivers in general and/or starvation of limited system resourses in the OS can provoke STOP 0x7F
Are you using /PAE, /3GB or similar options in boot.ini ??
Is hyperthreading activated in the BIOS? -Most software is unable to utilze 8 logical cpu's _effectively_, so you may actually in this case be better off disabling hyperthreading in BIOS)

Hyperthreading is turned on as I'm using W2K3 although I dont know whether SAPGUI V6.20 supports this. I need to check.
I am running CA's eTrust Antivirus V6.0, a fairlly old version, so there may be some mileage in removing that and trying again.

/PAE in itself is necessary to use memory beyond the first 4 GB - so that is OK

If /3GB is also used then be aware that this reduces the operating system's available memory - which could destabilize the OS under given (high stress/high utilization) scenarios.
/USERVA can tune memory available to the kernel in Win2K3
