Is there anyway to assign LUNs to particular hosts within the SAN and protect those LUNs from being stomped on by another host by using only HP-UX systems? Without using the Storage Allocator that from my reading only runs on a Windows platform?

You didn't mention which kind of disk controller you are using.
The va7xxx offers a simple solution to this -- you can apply a list of WWNs (Worldwide Names -- essentially FC MAC addresses) which are allowed to access a given LUN.
Storageworks products have a very similar feature.
