The short quick answer is that zoning will allow or restrict communication (depending on the initial configuration of the switch) between two devices on the SAN Fiber switch or other zoning device.

Typically, and in best practices, you want to limit devices on a SAN so that only the devices that need to communicate with each other will be able to. For instance, you would want a Windows Host to be able to use disks from a disk array, and you might want an AIX server to also use disks, but you might not want those two servers to be able to see each other via the SAN Switch.
