Synergy 12000 update

I have Synergy 12000 OneView version 6.2

I have 6 servers in a blade: Synergy 480 Gen10 WinServer2012R2 and installed SPP- HPE Synergy Service Pack (SSP) 2021.05.03

I want to upgrade OneView to version 7.2 

I read releasnote for SPP HPE Synergy Service Pack (SSP) 2021.11.01 – November 2021 . This version it does not support WinServer2012R2 and SPP HPE Synergy Service Pack (SSP) 2022.08.01 - August 2022 is no support too

Do I need to update OneView and SPP if there is no support WinServer2012R2?
Or should I update OneView and servers?

In order to remain completely supportable, you could upgrade as far as HPE OneView 6.60.00.  Beyond that, you need to decide how you will manage issues with Windows 20212R2, since you are already running the last supportable firmware and driver bundle that supports that operating system.  From HPE, it has gone EOSL.  We will still triage support cases but we won't be able to provide any fixes specific to those computes any longer.

One option is to upgrade the infrastructure to SSP 2021.11.01 and then go through the HPE OneView upgrades => 6.30 => 7.00 => 7.2 (or optionally wait for the next version forecast next month).  ...and then plan to upgrade your compute modules to a currently supportable Windows version, such as 2016, 2019, or 2022.  I personally would not stop at 2016 because that will  go EOSL too.  The challenge is that if you don't upgrade those compute modules something might go wrong and our support team will be extremely limited in how far they could help.

One further note:  If you are still using HPE Composer (1st gen) appliances, you must stop at 6.60.00 anyway.  You cannot upgrade to HPE OneView 7.x or beyond until you have purchased HPE Composer2 appliances.

Do I understand correctly that I only need to update the WindowsServer on physical servers? Is it necessary to update on virtual machines?

Correct.  The firmware and drivers published are only applicable to physical machines.  The supported virtual machines and their requirements are defined by your hypervisor host OS and version.
