I would like to know how to access the controller on this server (rx2660) to setup a pair of drives for mirroring.

Do you know what kind of controller the server has? and OS you are going to install?
If you have HP 8 Internal Port SAS controller, you can make use of EFI utilities like drvcfg and cfggen.
