APA (Trunking) Question
We currently use APA in LAN Monitor (Failover Active/Standby) Mode. We use 2 member GigE drops connected to different switches for redundancy.
We've already comunicated to our network team that manages the CISCO switches/routers and were told we can not do trunking if the drops are on seprate switches. They're saying "etherchannel" requires the trunk members to be plugged in to the same switch. Is this true? We'd like to do trunking but would still want to have Switch redundancy.

My understanding is the same.
All of my implementations have either been to the same switch or across two switches that are cascaded.

Etherchannel eh - do the CISCO's you have not yet support the de jure IEEE standard LACP/802.3ad (iirc it is ad...)
Trunking spanning non-stacked switches requires support for "meshing" which isn't terribly prevalent out there. Until then if you want to involve multiple switches, active/standby is the way to go.
