Going to change the pvtimeout value from the default to 180 for a bunch of servers connected to EMC storage. I was told that it would NOT require a reboot to take affect, but I just wanted to confirm real-world experiences.

It doesn't require a reboot.
In case You are dealing with tresspass issues an a Clariion/CX storage, the real key is to adjust the FCP_MAX_REQUESTS parameter to a lower value.
