I used your original suggestion of:
pvcreate
vgcfgrestore
vgchange

And then I ran fsck on the lvol and it was clean!! Apperently extendfs wasn't able to write any new data to the fs before it hung. So I got very lucky.

We are back up and running now, with no restore needed and no data lost. Thanks to everyone for all of their help.
