This all depends on what you are looking for.
If you are looking to upgrade the installed version, what I call a Maintenance Release, of the OS then use update-ux using the new media.
(I would only recommend update-ux for sub release updates of OS, not major release updates, those I would cold install )
If you are looking to simply patch your system then simply swinstall the patch bundles.
Typical reason for updating the release is because some software requires the new dated version. e.g. IVM 3.5 requires the OS version to be 0712 or later.
The only way to achieve this is to use update-ux not swinstall.
The update-ux procedures are outlined in the install and admin guide.
Basically.
1) swinstall ├в s host:/depot Update-UX
2) /usr/sbin/update-ux ├в f /usr/lib/sw/update-ux.new ├в s host:/depot HPUX11i-OE-Ent
-modify the package name for your type of OS. e.g. HPUX11i-OE-Ent updates the enterprise version.
-Use of the /usr/lib/sw/update-ux file controls what software is installed. If you do not modify it then you may get more software than you wish.

1) Just install the December 2007 bi-annual patch set, available at http://itrc.hp.com Installing the patch set leaves you at a state of binary equivalence with a cold install.
2) If you have a support contract for software you can get any release of HP-UX covered by that contract for free. December 2007 FOE from any other FOE. Upgrading to Mission Critical however requires upgrade of software support contract.
