I have used cstm to identify that my CPU's are PA8900. Where can I reference whether these are single or dual core ?

if you have a single core cpu "top" will display this as an single cpu. If you have dual core cpu's top eill display therse as multiple CPU's.

I used cstm and confirmed single or dual core by looking at the slot number for each CPU entry.

the PA-8900 *is* a dual core CPU - always.
