Re: Would you use SAMBA UNIX <> UNIX fileshare over NFSv3 ?
Samba has some tweaks that can be helpfull, like force user, directory mode, create mode, hide directories, etc.
If your configuration does not requires special needs, you should use NFS.

Re: Would you use SAMBA UNIX <> UNIX fileshare over NFSv3 ?
Unix = Good. Windows = Bad. Therefore, NFS would be my first choice. I wou;d only consider Samba if Windows were part of the mix and even in that case I tend to use a Windows implementation of NFS except in the case when a Unix box is serving solely as a fileserver for Windows clients.

Re: Would you use SAMBA UNIX <> UNIX fileshare over NFSv3 ?
Samba is what it is - for sharing files between Unix servers and Windows clients....
Some docs on NFS:

Re: Would you use SAMBA UNIX <> UNIX fileshare over NFSv3 ?
SAMBA is not prefered when you want to share between UNIX to UNIX. NFS is the best available.
As the definition of SAMBA says, "Samba is an Open Source/Free Software suite that provides seamless file and print services to SMB/CIFS clients." Samba is freely available, unlike other SMB/CIFS implementations, and allows for interoperability between Linux/Unix servers and Windows-based clients.
