Actually raidtab is "depricated" (not really used any more). mdadm is the tool for setting up and controlling raid for any of the newer distros.

Also you can use LVM for disk managment.
I strongly recommending you hardware RAID :)

as far as i can remember, redhat has always supported software raid. it can be set up during the installation.
software raid with these days fast processors have little overhead and will work on any ide/scsi controller linux supports. this is important because some hardware raid controllers might work, but may not pass all information to linux (of failing disks, broken mirrors etc.) and that is rather important.
