I recently bought some envizex II terminals without any software of course:-(
I was wondering is there a way to get them working in a Linux/Intel environment? Or do I need to find an hp-ux server?

You'll need the firmware for the thing, but Linux can provide everything else. IIRC, those terminals use bootp/tftp for their OS, which can be set up fairly easily, then you can configure xdm/gdm/kdm or whatever display manager you want to allow XDMCP connections and you're ready to go. I've had one hooked up to a RedHat+Ximian GNOME system and it looked fine.

Solution
You will need a boot server to provide the "Netstation" (formerly "Enware") software via NFS/TFTP and optionally, DHCP/BOOTP services.
I am in the process of uploading a generic install image of B.09.11 to this FTP site:
ftp://enware:enware@hprc.external.hp.com
By the time you read this, it should be there.
Gunzip & un-tar the file generic.tar.gz & see INSTALL.GEN for installation.
You'll probably need an XDMCP-capable login manager running under Linux also, such as xdm, gdm, kdm, etc.
