is there a way to block mail from getting to an external recipient?

I'm running sendmail-8.12.11-4.RHEL3.1. We have a number of QA servers that are sending unnecessary emails to our helpdesk. sendmail needs to be running though. Is there a way to block the emails from getting to this recipient? The email address is external to the hosts - it's Windows Exchange.

¿Do you have a SMART HOST configured? ¿Do you need to send mail outside the box?

I found that all I need to do is add a line to /etc/mail/access and restart sendmail.
