Can Red Hat Advanced Server 2.1 config RAID byt itself (as RHEL 4)?

Yes,

RH AS does not have the easy mdadm command but you can do raid on it.

In RHEL 4 I see the RAID partitions as /dev/mdX (I am not sure of my memory). How a RAID partition was shown in RHAS 2.1?

In the same way. /proc/mdstat is the standar way to view the raid status.
