Plus If I am buying a Seagate exos HDD x18 18 tb is the server recognize this drive?

An external SSD can be connected via a USB port and used as we use in our personal computers.
But if you are planning to install the drive to the hardware then I suggest you to go through the below link to find the SAS, SATA or NVMe SSD's that is supported by the DL380 Gen9 Server and plan accordingly.HPE ProLiant DL380 Gen9 Server - Option Parts Moderator [above link is no longer valid, please visit https://support.hpe.com/connect/s/ to find the latest info ]

Plus I couldn't find any information about this hp ssd drive (P05320-001) is it compatible with the dl 380 gen 9?

Yes, regular SSDs such as the Samsung 870 EVO or QVO should work in the DL380 Gen9 server. The server supports SATA SSDs with enterprise firmware, which includes regular consumer-grade SSDs. However, it is always recommended to check the compatibility of specific hardware components with the HPE to ensure proper functionality. I would also recommend to contact support or HPE sales team to get more clarity.
Regarding the HP SSD drive (P05320-001), it appears to be an HPE Mixed Use (MU) SATA SSD. The DL380 Gen9 server supports both SAS and SATA hard drives and SSDs, so this SSD should be compatible with the server as long as it has the enterprise firmware that is compatible with the DL380 Gen9. Again, contact support once.

I just tried to use a cheap Chinese SSD M.2 stick with:
* U.2 case
* Orico SATA case
and my DL360Gen9 gives me amber LED in both cases.
Won't work.
Not sure if it is because of the M.2 stick or because of the 2 SSD cases...
It is gonna be risky to buy cheap SSD (M.2 or SATA version) and use it in HPE servers.
