Can someone point me to some good documentation for LAN console setup

If you're referring to the Secure Web Console, you could start with this (it's RP5400 specific but should be applicable to other platforms):

Here is info for GSP LAN console for SuperDome. Other new servers (rp7415) are similar:

The idea is:
0. Get an IP address from LAN group.
1. Connect LAN console port to LAN.
2. Plug in laptop to regular console port.
3. log in to GSP.
4. Get a GSP prompt
5. type "lc"
6. Enter IP, gateway, etc.
...
