We currently have 2-P4300 nodes setup in a Network Raid 10 array. We have purchased an additional P4300 and would like to convert from a Network Raid 10 to a Network Raid 5. How and can this been done without backing up, deleting, and restoring volumes?

You can do this online... Just go the properties of the volume and change the protection level...
Off course I assume you added the 3rd node already in the management group and cluster and that all data volumes are restriped accross all 3 nodes... And so the overall health is OK...
Be sure that the health of the volume is OK, so that it is not in a degraded state or so...
