what kind of HPUX version can I install
on a D370 server ?

You can install 10.20, 11.00 and 11.11
You can also install it 32 and 64 bit. See this chart. Don't forget that 10.20 is not supported anymore.

and don't forget, if you load 64bit version, you will not be able to use any EISA i/o cards.
