To add to Pete's comments, I'd be happy that HP at least offers *patches* and patch bundles for out-dated, unsupported operating systems. While you are not going to see anything new fixed, at least you can avail yourself of the last things offered. In fact, there is a nice last rollup of 11.0 patches still available here [at the ITRC Patch Database]:

Is there a matrix table for every HPUX release (v1, v2 and v3) where all "End of Support Dates" are mentionned for these kind of applications ???

I'm not aware of a single matrix.
But you can find such information related to single products, for example for vPars it is here:

Chapter 3.6 Obsolescence of vPars Releases
Similar info for most products can be found on http://docs.hp.com
Note: If a product is directly related with an OS version and this OS is unsupported, the product will most likely have the same status.
