Is there a setup manager wizard to do that like in Windows 2003? Customizing the xml unattended file is pretty confusing any help would be great.

As far as I am aware any tool for Vista scripted installs you should find useful for 2008.

Use Windows System Image Manager in WAIK
Once you have connected the correct windows image and the answer file.
Go to tools and make sure Hide Sensitive Data is ticked and save file.

components
7 oobeSystem
x86_Microsoft-Windows-Shell-Setup__neutral
of the Answer File
or in the windows image
components
x86_Microsoft-Windows-Shell-Setup
choose what you need and copy to Answer File and add usernames and passwords
