routing MX records

We are about to demo one of the spam services available. For the demo all non-local email, inbound and outbound, needs to be re-routed through their server. So for a short time:

I am having my ISP send all MX records to their server instead of mine.

My sendmail server needs to route all of it's outbound (non-local) mail through their server.

Is it the DS entry in sendmail.cf that I change? Anything else?

As you say, it should only by the DS entry that you need to change. At least that's the only one I have changed on our machines to route mail out to another server.
Never preceed any demonstration with anything more predictive than "watch this"
